Mash tun

nounStandard termBrewing

An insulated or heated vessel where crushed grains and hot water are mixed to convert starches to sugars.

A mash tun is a large brewery vessel designed to hold the mixture of milled grain and hot liquor during the enzymatic conversion of starches. It is typically insulated to maintain precise temperature rests and often features internal motorized rakes or plows to keep the mixture homogenous. In many traditional breweries, it also includes a false bottom to double as a lauter tun for separating the liquid from the grain.
