Calandria

nounStandard termBrewing

A high-efficiency tubular heat exchanger used to boil wort inside a brew kettle.

A heating unit consisting of a bundle of vertical tubes surrounded by a steam jacket, installed either internally or externally to a brewing kettle. As wort enters the tubes, the steam jacket rapidly heats it to a boil, creating a strong convection current that shoots the liquid upward. This vigorous circulation ensures an even, rolling boil, promotes protein coagulation, and drives off volatile off-flavors like DMS.

Heard on the job

The internal calandria is heavily fouled with baked-on proteins, so we need to run a strong caustic cycle before the next brew.
