To talk shop is to discuss work matters during social or off-duty hours.

To discuss professional matters, technical details, or workplace gossip outside of working hours. It usually happens when colleagues socialize together, often alienating non-coworkers who do not understand the jargon or care about the internal politics of the workplace.
