A specialized blend of highly alcohol-tolerant yeast and chemical nutrients designed for rapid fermentation.

This aggressive mixture is engineered to ferment simple sugar washes to very high alcohol by volume, often hitting 14 to 20 percent in just a few days. Distillers and makers of neutral spirits use it because the added nitrogen, vitamins, and minerals push the yeast to work at maximum speed without stalling. The tradeoff is that the stressed fermentation often produces harsh fusel alcohols and off-flavors that require heavy distillation or carbon filtering to remove.
