A highpass filter is a circuit configuration that blocks low-frequency signals, such as DC offset or mains hum, while passing signals above a specific cutoff frequency. In passive analog circuits, it is typically formed by a series capacitor followed by a resistor to ground. The steepness of the low-frequency rejection depends on the order of the filter.
Throw a simple RC highpass on that ADC input to strip out the 60 hertz noise from the power supply.
